Organic rice pudding

 Ingredients for 12/14 puddings

For the pastry:
250 g of 00 flour and 50 g of rice flour
150 g of softened butter
1 egg + 1 yolk;
100 g of icing sugar lemon zest and cold water to taste;
a pinch of baking powder.

For the filling:
600 ml of milk
250 g of original rice
100 g of sugar
1 vanilla bean
1 egg yolk
zest of an orange and a lemon.

Procedure

Start by cooking the rice which must then cool before composing the puddings. Cook the rice in boiling water for about 5 minutes so that it loses some of the starch. Drain and cook in hot milk with vanilla bean, organic orange peel, sugar, which must be added last. Rice must be well cooked, the mixture soft. If necessary, add milk to taste. Leave to cool. In the meantime, make the pastry, by hand or in the mixer: add the sugar sugar 150 g of softened butter, eggs, lemon zest, a little yeast, cold water to taste; form the dough without working it very hard. Spread to a thickness of 4-5 mm. and cut the discs with the cutter to form the baskets in the buttered molds or lined with parchment paper. Add 1 egg yolk to the slightly warm or cold rice and insert the soft mixture obtained in the baskets. Bake in a hot oven at 180 ° for about 20 min. until lightly browned, take out of the oven, leave to cool, sprinkle with icing sugar.
